Baskets & Minitarte with walnuts mousse

I got from a friend a recipe of some  very, very  tasty and very very yummi..stuff. I made it and I was reeeeeeeeeeeeeally amazed by its flavor developed inside of that tender dough. It worths all the money.
What we need for that ?

For dough:
2 cups flour
1 pinch of salt
3 yolks
1/2 cup pork fat
1/2 cup thick cream
100 gr sugar
1 tsp ammonia dizolved with 1 tbs of lemon juice
zest from 2 oranges or lemons
Mixt all the ingredients till result a smooth and easily to work with dough.

For filling:
2 white eggs(I beated 3)
50-100 gr sugar
1 cup ground walnuts ( I added an extra amount of walnuts then recipe says !)
Beat the white eggs with sugar then add walnuts.Mix all.

Form dough balls, flatten them then and cover with dough de inside walls of the metal shape. Put in it 1/2 tsp of any kind of thick jam and cover it with 1 tsp of filling( maybe more).Bake all in preheated oven at 220-240 C or till the baskests turn in goldish/brownish (about 15-20 minutes). Get them out from the oven and let them stand for few minute. Remove the baskets from de metal shape (carefully, it's hot!)
