Serbian potato salad

Serbians and Croatians potato salad is a very simple salad. With an oil-and-vinegar dressing, as simple as the salad is by itself it's a perfect picnic food. 
This is the best if it's made the night before.
It's best as a garniture for Pljeskavica.



Ingredients:
A.
6 large potatoes, boiled, peeled and sliced or diced

B.
1-2  yellow onions,  thinly sliced  or 1 bunch sliced green onions
1/4 or 1/8 cup white vinegar
1/2 or 1/4 cup canola or olive oil
2 clove garlic, finely chopped
2 roasted red pepper, chopped

salt
ground black or colored pepper
2 tablespoons sugar


Place potatoes in a large bowl. 
In a jar mix well all ingredients from point B, then toss potatoes with dressing. Refrigerate all overnight.
Adjust the taste if necessary.
Serve at room temperature.
