Salata marocana de morcovi / Moroccan Carrot Salad

Rapida, delicioasa, exotica si facuta in mare parte din ingrediente pe care le avem la indemina. Recent am descoperit salata asta insa deja am facut-o de 3 ori. E o reteta perfecta deoarece intotdeauna ai morcovi in casa si e atit de rapid de facut chiar daca trebuie sa o lasi sa stea pret de-o ora.
E fabuloasa poate tocmai acelor ingrediente pe care le folosesti sau poate, datorita acelor migdale prajite dar, trebuie sa marturisesc ca odata am inlocuit migdalele cu nuci. Aroma usoara de 'afumat' da acea reala si speciala trasatura a gustului final. 
Deci, cu sau fara migdale, cu sau fara nuci, salata oricum va fi una fabuloasa.

75-100 gr fulgi de migdale(nuci)
450-500  gr morcovi rasi
2 l-te miere
3 l-ri ulei de masline
sucul de la 1/2 lamiie
1 l-ta apa de trandafiri (eu vin si zic ca poate fi doar o optionala alegere)
50 gr stafide
1 l-ta scortisoara proaspat macinata
sar si piper proaspat macinat(dupa gust)

1). Prajeste migdalele(nucile) in cuptor, pe hirtie de copt, pt. 10 minute sau pina se auresc. (Nu e de neglijat si varianta tigaii folosite pe foc deschis.). Pune-le deoparte.
2). Rade morcovii si amesteca-i cu restul de ingrediente. Lasa-i sa stea aproximativ 1 ora.
3). Dupa 1 ora, adauga-le migdalele sau nucile si amesteca bine.

Moroccan Carrot Salad

Fast, delicious, exotic, tasty and mostly made from ingredients that you could easily get. 
I  recently discovered this recipe and I have already made it three times.
It's  a perfect recipe because there are always carrots in the house and it's so quick and easy to prepare it.
It's  fabulous maybe because of all the ingredients you use, maybe because of those toasted almonds...I must confess that once I replaced the almonds with walnuts and the taste was as good as it could get. The smoky flavor gives that real and special touch to the final taste. So... with or without almonds, with or without walnuts, the salad will still be a fabulous dish to cook when you have little time on your hands.
Just try it !

75-100 g flaked almonds(or walnuts)
450-500 g grated carrots
2 tsp clear honey
3 tbsp olive oil
juice of a ½ lemon
1 tsp rose water (just an optional choice)
50 g raisins 
1 tsp freshly ground cinnamon
salt and freshly ground black pepper, on your taste

1). Toast almonds(or walnuts) in oven, on a baking sheet, for 10 min, or until golden, set aside.
2). Grate the carrots and mix them well with the rest of the ingredients . Leave all at room temperature for 1 hour.
3). Stir in the toasted almonds/walnuts  just before serving.
