Aubergines salad

Brought by Arabs to Europe, eggplant is to us, one of the most important vegetables of late summer  and a ubiquitous star of  "jar-time" in  Autumn: frozen chopped eggplant, salted eggplant in  jars, eggplant salad and vegetable stew( 'zacusca' ), eggplant stuffed in juice tomato or oil, so on.
If one of us would measure (as someone do from time to time, that you'll be stoned what it could cross through their mind) and put the eggplant length head to tail, which are cooked from August to November in Romania, you would be shaken by the interstellar dimensions of the result.
If someone turns movement(of wooden spoons from the overweighted bowls by eggplants) into electricity we've never imported oil.
Shockingly tasty, the eggplant salad is an-almost- daily appetizer of a non-existent Romanian season: summer-autumn.

1 kg eggplants (riped, well colored, firm, long)
1 glass olive oil
1 big red onion
1 tbs apple vinegar
salt, peper (on your own taste and health)
tomatoes for design
Place the eggplant on an open fire, turn'em on all sides, until they soften.
Clean immediately burned shells, salt the pulp and put it to drain, at least for 1 hour.
Chop the onion and quickly wash it in a stream of cold water (to leave the oxidized bitterness ); drain it very well.
Mix onion with vinegar.
Chop the eggplant pulp, then rub this paste with oil, little by little, until it thickens and foamy.
Add onion and vinegar sauce (pepper, if you wish). 
Garnish with tomato slices.
Some tips: you can add 1-2 tbs of sour cream and 3-5 crushed garlic; 
I also used to add   some grounded coriander and cumin.
I eat this salad with mamaliga( a Romanian polenta).


Romanian version (din invataturile lui Radu Anton Roman):
Adusă în Europa de arabi, vânătă este la noi una din cele mai importante legume ale sfârşitului verii şi o vedetă omniprezentă a „borcaniadei” de toamnă: vinete tocate la congelator,vinete sărate la borcan, salată de vinete şi zacusca, vinete împănate în suc de roşii, în ulei etc. Dacă ar măsura cineva (cum o şi fac unii din când în când, de te cruceşti ce-a putut să le maidea prin minte) lungimea vinetelor puse cap la coadă, care se gătesc din august până-n noiembrie-n România, ar fi zguduit de dimensiunile interstelare rezultate. Dacă ar transforma cineva în energie electrică mişcarea lingurilor de lemn din castroanele desalată de vinete, noi n-am mai importa petrol.
Şocant de gustoasă, salata de vinete e aperitivul aproape zilnic al unui anotimp românesc inexistent: vara-toamna.

SALATĂ DE VINETE



1 kg vinete (coapte, bine colorate, tari, lungi)
1 pahar untdelemn
1 ceapă roşie, mare tare
l lingură oţet mere
2 roşii coapte
sare, piper, după voie şi sănătate
Se pun vinetele la fript pe foc viu, pe toate părţile, până se-nmoaie
Se curăţă imediat de cojile arse, se sărează şi se pun la scurs, pe un fund înclinat, cel puţin1 ceas
Se toacă mărunt ceapa, se spală iute într-un şuvoi de apă rece (să-i iasă amăreala oxidată)se scurge bine de tot
Se amestecă ceapa cu oţetul.
Se toacă vinetele pastă, apoi pasta asta se freacă cu ulei, puţin câte puţin, până se-ntăreşteşi se face spumoasă
Se adaugă sosul de ceapă cu oţet (piper, dacă mai e cazul).
Se ornează cu felii de roşii

Taine: se mai pot adăuga 1-2 linguri smântână şi 3-5 căţei de usturoi pisat
Imi  place intotdeauna sa adaug salatei de vinete coriandru si chimin zdrobit si s-o maninc cu mamaliga.
